You can be anyone you like, TBH, including yourself. The only thing is that:

1. You have to have been born in the Vault.
2. You have to be at least 16, as, according to official lore, Vault residents take the G.O.A.T at 16.
3. Your profession is chosen via the G.O.A.T. That basically just changes your starting equipment and how Vault 46 perceives you. It doesn't matter too much, just don't say something like: "X, my character, is the Vault's Doctor/Overseer/Village Idiot."
