[RECIPE] Almond and Blackcurrant Honey Cake with Mint Frosting

So, this is the cake I made for Seb's birthday. I invented the recipe to have as close as I have to ingredients that would be used in Redwall. Here is the recipe for your enjoyment:

Almond and Blackcurrant Honey Cake with Mint Frosting recipe:


150g butter
4 Tbsp honey
2 Tbsp blackcurrant syrup
2 eggs
2 1/2 cups flour
2 tsp baking powder
1 cup almond milk
1/2 chopped almonds

Heavily whipped cream. (To the point of almost butter)
1 Tbsp honey
Two sprigs of crushed mint leaves
A very small amount of peppermint essence

Mint leaves and almonds to decorate.
