I can't seem to find a decent answer to this - cheese is present in so many of the books, in feasts and also in making cheese as Skarlath did in Outcast. But what is this cheese made from? Milk? There aren't any cows/buffaloes/goats/etc as far as I know...  ???

So what did they use for the cheese?

Honestly I can't remember many specifics not having read the books in years.

Hmm, greensap milk. Ah so like some plant produce, similar to soy milk? That would make sense.
