Many times throughout the series something called "greensap milk" was mentioned. They probably made cheese, butter etc. using that.

No!! it says in the series that they had goat cheese so they must have gotten that somehow.

The goat cheese was only mentioned in the first book, which also had other quirks like the horse and mentions of a town dog and piglets. Brian Jacques wasn't even planning to write a 22-book series at that point, so he hadn't hammered out all the details. And since he never mentioned those things again, I don't think goat cheese should be considered canon.

I agree. Most series do not make it to 22 books.
