Ingredients: 2 cups flour, 1/4 teaspoon salt, 3 teaspoons baking powder, 1 cup sugar, 1 cup blueberries 1/2 cup chopped nuts, 2 eggs well beaten, 1 cup milk or soy milk, 3 teaspoons canola oil
Directions: sift together flour, baking powder, salt, and sugar. Add berries and nuts. Combine eggs, milk, and oil; stir into flour mixture until just moistened. Pour into a wax paper lined 9x5 inch loaf pan, or one sprayed with a nonstick spray. Let stand for 20 minutes. Preheat oven to 350 degrees Farenheit; bake 1 hour or until done.
