Nah. Pokémon have a maximum of three links in an evolution chain (discounting branching evolutions).

Example of a normal evolution chain:
Bulbasaur -> Ivysaur -> Venusaur

Example of a branching chain:
                                > Poliwrath
Poliwag -> Poliwhirl <
                                > Politoed

So these usually only add an extra one Pokémon.

Except Eevee, which can evolve into any one of these:
-Flareon
-Jolteon
-Vaporeon
-Espeon
-Umbreon
-Leafeon
-Glaceon
-Sylveon

The reason there are so many Pokémon is because there are seven generations of games going back years. They have to keep adding new Pokémon to keep things interesting, and as such, it becomes necessary to have around a hundred new Pokémon per generation.
Gen 1 (Red and Green/Blue version) has 151 Pokémon.
Gen 2 (Gold and Silver version) adds 100 Pokémon.
Gen 3 (Ruby, Sapphire and Emerald version) adds another 135.
Gen 4 (Diamond, Pearl and Platinum version) adds another 107.
Gen 5 (Black and White version) adds 156 more.
Gen 6 (X and Y version) adds another 72.
And Gen 7 (Sun and Moon version) adds 81 more, bringing the current total up to 802 (I misremembered how many there were).

(There are also FireRed and LeafGreen version, HeartGold and SoulSilver version, and Omega Ruby and Alpha Sapphire version, which are HD remakes of those original games, but compatible with the main games from the generations they were released. ORAS is set in an alternate timeline. There's also Black 2 and White 2, which are direct sequels to the original Black and White games, but the point is that none of them add any new Pokémon. Whereas the next games, Ultra Sun and Ultra Moon, are apparently set in an alternate timeline and are set to feature more new Pokémon.)

My abs are sore. From crunches. Crunches! Crunches are easy! I shouldn't be sore. Granted, I did do ninety of them...

Crunches?! I love crunches! Ninety isn't enough, though. DO MORE.

Well how about a demonstration then:
Images of all Pokémon, which illustrates the concept more easily

There are actually more than 802 Pokémon here, because some alternate forms are included.

See how it's usually easy to identify where an evolution chain begins and ends?

Evolution in Pokémon terms would be more closely likened to metamorphosis by Earthly standards rather than adaptation.

Is that a sandcastle Pokemon I see there???
Yes. Sandygast and Pallosand. Not my favourite Pokémon, that's for sure.

GUESS WHO JUST RE-FOUND THE IGNORE BOARDS OPTION.

HALLELUJAH! NO MORE HAPPY BIRTHDAY BOARDS ANNOYINGNESS!

Ashleg

One day, long ago, the narwhal Asysymorez was out shopping in his city to find the best and greatest gift for his friend.
"Mrrrgh," he grunted. "Window hopping is doing me no good. I must actually go inside!"

And so he did.

Unluckily for Asysymorez, the store that he had wandered inside of was a vegetable store. And his friend was a carnivore!
Cursing quietly, the narwhal made his way up to the stands.
"Happy Birthday me," he whispered.
