I can't seem to find a decent answer to this - cheese is present in so many of the books, in feasts and also in making cheese as Skarlath did in Outcast. But what is this cheese made from? Milk? There aren't any cows/buffaloes/goats/etc as far as I know...  ???

So what did they use for the cheese?

They have mentioned milk before too in some of the books. They called it Greensap milk or something.

That is right, Greensap milk. However, Mattthias drank goats milk in Redwall, so yeah...

Honestly I can't remember many specifics not having read the books in years.

Hmm, greensap milk. Ah so like some plant produce, similar to soy milk? That would make sense.

I read somewhere that the milk they use is made from plants, not animals.

That always had me stumped. Its made clear that there aren't any cows or anything like that, so it is a mystery...

What oh, old chap, if I remember correctly, you can make a butter substitute with it, or maybe I'm mistaking it with young unrippened hickory nuts...

Anyway, my best guess would be that the bally greensap milk is what they use, wot?

I'm not positive but I thought it was made from something called "meadowcream". I don't know what that came from, however. Probably a sap from a plant. Didn't they make a cheese with sliced almonds in it and put it on celery? Yum-yum, wish I  had some right now!

This is a good question. There are indeed no cows or goats in Redwall. There are, however, plants that produce milk-like substances. This is what is referred to as "greensap milk". Besides, how could you have an abbeyful of mice with no cheese?

Many times throughout the series something called "greensap milk" was mentioned. They probably made cheese, butter etc. using that.

Yes, let's please keep it at that. I'm not entirely sure that they would it. No offense meant to anybody, but that just sounds kinda gross to me.

The goat cheese was only mentioned in the first book, which also had other quirks like the horse and mentions of a town dog and piglets. Brian Jacques wasn't even planning to write a 22-book series at that point, so he hadn't hammered out all the details. And since he never mentioned those things again, I don't think goat cheese should be considered canon.

I agree. Most series do not make it to 22 books.
