It isn't hard to make at all.

Water: About two-thirds to three-quarters of the pot.
Carrots                                                 \
Potatoes                                                 \
Celery                                                      \
Onions                                                       \
Peas                                                           / As many as desired
Green beans (optional)                               /
Beans (any kind, except baked and refried) /
Spinach/Swiss chard                                /
(I like adding rice or noodles in the soup to thicken it; these should be added with the vegetables)

I've used water left over from boiling potatoes, but any water can do. When it boils, put in all ingredients cut up to desired size, and continue to boil on high, stirring occasionally. Seasonings should be put in at this time as well for the flavor to more readily seep in. Some seasonings might include: garlic, oregano, dill, salt, and pepper. Vegetable bouillon can be used, but not if you are trying to cook as if you were in the middle ages. When onions, carrots, and celery are soft, heat can be reduced and the pot covered. After about ten minutes of simmering, taste soup and make sure it is seasoned correctly. Good with French bread.

I made this for my family on a Friday when I didn't feel like making anything with fish or cheese. I just started throwing things in a pot and got this tasty result.

Can you make it without celery? Because I don't like celery.

The Skarzs

Sure!
Really, any of the listed ingredients are optional.
