No. I am reading Rakkety Tam now, and there are two male ermine... They got left behind to try to repair Gulo's ship, and tried to attack Tam and Dooogy when they lit the ship on fire. Last thing they ever did.

I don't think so. A stoat is often called an ermine when it's in its white winter coat.
