Comedic relief should not be underestimated. I wouldn't say they have the same personality. Yes, the defining features of hares (their outgoing, enthusiastic character and their love of food) is usually prevalent in all of that species, but they have their own details too.
Hunger is not something that should be underestimated either. I've certainly wanted more food, even after a meal, before. Is that really something worth not liking someone over?
Every 'goodbeast' species is racist towards vermin, at least in the books and in most of the fanfiction I've read. Honestly, I can't blame them most of the time. They've grown up all their lives knowing that, time and time again, their homes have been attacked and invaded by vermin. They've known and believed that vermin are evil scum. Hares, especially, since they have a rather military focus, have often lost loved ones to vermin. Why shouldn't they be racist? They haven't met with any reason not to be. Also, until maybe a hundred years ago, if that, everyone was racist to some extent. Many people are still racist. The setting of these stories is around the Middle Ages, where there was certainly racism.
It's not just the combat skills and accents that make them loveable (and I'm not saying they're the best parts of the books, that position belongs to the moles, I'm just saying they're loveable), it's their never failing cheerfulness, their courage and loyalty, their determination to stick by what they believe in to the very end. No matter what happens, they're always encouraging others and keeping their spirits up. I admire that. I have tried to be like that in my own life, and I know how difficult it is to stay optimistic, and I haven't been through half the trouble they have. I believe their constant talking and asking for food is not only because they're complaining, but because they're trying to take their comrades' minds off the danger and peril, the despair, that could drag them down. You don't have to think them the best part of a story, but at least acknowledge the good they do.

@shisteer of nothing much, read Highwing Urthblood Cycle and you will understand why I hate hares (and Wing more-or-less stays loyal to species portrayal on the goodbeasts side)

You say this like that's an exception in the Redwalll series XD All the 'good' species share the same personality traits within their species. So do the vermin, honestly, there's just not as much variation from species to species. Except for maybe foxes.

Honestly, that's a good point. None of the characters have that much distinction, from book to book, besides the occasional beast, like Egbert the Scholar.
