And I was running in stealth mode. A good assasi- thief can run without disturbing the sand.

Practically nothing. Well, except for the fact that a priest can either heal you, or kill you (using extremely painful methods); while a sorcerer can only kill you. The ones you need to look out for are the necromancer class. And the pyromancer class, and thaumaturge class, and.... Well, pretty much all spell-casters except priests or theurgist class.
