And in my opinion, Happy holidays is for people to lazy to say and remember all of them.

  I usually just wish someone a merry Christmas, as that's the only holiday (besides New Years) I celebrate around this time of year.  I like the idea of wishing someone the happiest of holidays for the holidays you celebrate, instead of giving the generic "happy holidays!".  If you celebrate Hanukkah, say "Happy Hanukkah!", and if you celebrate Christmas, say "Merry Christmas!".  A lot of the people you say it to probably won't care. 

  As for your signature...  *Drops a various assortment of pastries onto the ground*  Aww...  B-but Christmas gifts!
