Nah. Pokémon have a maximum of three links in an evolution chain (discounting branching evolutions).

Example of a normal evolution chain:
Bulbasaur -> Ivysaur -> Venusaur

Example of a branching chain:
                                > Poliwrath
Poliwag -> Poliwhirl <
                                > Politoed

So these usually only add an extra one Pokémon.

Except Eevee, which can evolve into any one of these:
-Flareon
-Jolteon
-Vaporeon
-Espeon
-Umbreon
-Leafeon
-Glaceon
-Sylveon

The reason there are so many Pokémon is because there are seven generations of games going back years. They have to keep adding new Pokémon to keep things interesting, and as such, it becomes necessary to have around a hundred new Pokémon per generation.
Gen 1 (Red and Green/Blue version) has 151 Pokémon.
Gen 2 (Gold and Silver version) adds 100 Pokémon.
Gen 3 (Ruby, Sapphire and Emerald version) adds another 135.
Gen 4 (Diamond, Pearl and Platinum version) adds another 107.
Gen 5 (Black and White version) adds 156 more.
Gen 6 (X and Y version) adds another 72.
And Gen 7 (Sun and Moon version) adds 81 more, bringing the current total up to 802 (I misremembered how many there were).

(There are also FireRed and LeafGreen version, HeartGold and SoulSilver version, and Omega Ruby and Alpha Sapphire version, which are HD remakes of those original games, but compatible with the main games from the generations they were released. ORAS is set in an alternate timeline. There's also Black 2 and White 2, which are direct sequels to the original Black and White games, but the point is that none of them add any new Pokémon. Whereas the next games, Ultra Sun and Ultra Moon, are apparently set in an alternate timeline and are set to feature more new Pokémon.)
