I've heard it can really only be harvested at the beginning of spring? I've never done it but I've always thought about doing it.
Yeah, I think so, although whether you'd do it in winter or spring depends on climate. The temperature has to be below freezing at night and thaw out during the day for several nights in a row to get the sap flowing properly. (I did extensive internet rabbit-holing on this subject not too long ago)
