For some reason i always thought they were redwall size but brockhall it even said was huge

Yes well in The Sable Quean picture the door is big and the tree small but in Mossflower picture the tree is Big and the door is small.

Hard to say, but I would think he'd look like a young mouse. 

The appearances of the animals, aside from colorings, markings, scars, etc. never really bothered me since I would be hard-pressed to tell the difference between my hamsters, let alone a strange animal that I didn't know very well.
