The mice are great in my opinion and got edged out by "cooler" species in the last bunch of books, like badgers and otters and hedgehogs and whatnot.  I really like the mice and would've liked to have seen more of them.

That said, I like characters more based on their personality than on their race.  There've been hares I hated and hares I loved, same with badgers, otters, and all the others.

But what I really would've liked to see more of are goodish rats.  I have a personal bias because I have beloved pet rats and am something of an advocat for ratkind, but I really loved Grubbage and Blaggut and think there could've been more like them.  A rat as a brother at Redwall would've made my day.  I think they're generally a little less evil than the ferrets and stoats (with many notable exceptions).  But there was often talk of rats being easy to please and enjoying sitting around the fire singing, and drinking grog.  And in Redwall the brothers and sisters seemed reluctant to judge the rats as bad just for being rats.

The wildcats! There are few of them, but I think they're awesome!
I also like the foxes. Sleek, sly...awesome. I'm reading Marlfox again so now I really like Marlfoxes. Bwahahaha! :o Did I really just do that??  :-[

My favourite species is Hare and mouse. I like these species from my childhood when I was playing with them with innocence that a mouse can bite me if I tease him but in short I like hares.
