Of course he can be both!...right? I mean, the term bilge is referring to a ship, so that ship could be from Portugal.
And we also have to keep in mind that the text specifically says "some said", it sounds like a rumor to me. I'm ready to believe it, but still.

My friend has seen rats as big as cats where we live. . . not sure what kind they are.

All the far off lands only seem to be necessary to the specific book they are in. Because of how far away they are, it comes to reason that they wouldn't be the first thing to come to mind if Mossflower is in danger, thus making it unnecessary to be mentioned again in major storylines.

Well, it says at one point that some speculated he was from there. But that was the first book, and Jacques didn't expect to write an entire series. Later books show that the series doesn't take place in the real world.

I don't think Redwall stories take place anywhere legitimate, I suppose the land is made like Britain but it's probably not exactly Britain.
So correct me if I'm wrong but I don't think Britain has any deserts.

There are no true deserts anywhere in Europe, and definitely none of the Sahara-like scale that is depicted past the great cliffs.
