If I can sort of leave Christopher Denise off in his own realm and not try to make a decision about him, then I'd say Chris Baker, all the way. Not just for this cover drawing:

But also for the fantastic illustrations in The Legend of Luke and Lord Brocktree:

I agree with you completely! Salmandastron the mountain was perfectly drawn, and it just felt like the home of Badger Lords.

Such a good artist!

I love that cover. I have posters of that on my bedroom wall  :)

Troy Howell the Cover illustrator  is my favourite.

David Elliot for me. His pictures really took you into the moment and he had gift for facial expressions!

Too bad it was wasted on mediocre/uneven/the worst in the series stories...

Let me put this clearly: I like all of them!!!

Life is too short to rush through it.

General Ironbeak

I love David Elliot. I felt he did a really good job on the books he was involved with, even if those books weren't the stronger ones.

Søren

Revive.
I'd say Cris Baker. He did the ones here:

The illustrations done fore Sable Quean and Rogue Crew are pretty cool, they at least make Abbes Marjoram super cute.

Mine would have to be a close tie between Chris Baker (who's already been mentioned a few times, so I won't talk too much about him) and Sean Rubin (the artist who did the chapter illustrations for The Sable Quean and The Rogue Crew, as well a lot of the audio book covers). So, Mr. Rubin is responsible for these:

As well as one of my favourite renditions of Martin's tapestry to date:

Really, I'd say both Chris Baker's and Sean Rubin's respective styles show different sides of Redwall, with Baker's being more grounded and serious, and Rubin's being more cute and cartoony (while still being absolutely awesome when it needs to be). Both fit the series equally well in their own ways, I'd say.

Oh, and before I go, did I forget to mention that Sean Rubin has done some comic book work? Yeah, he did the art for the story Potential from the first Legends of the Guard book (part of the Mouse Guard series, which anyone who likes Redwall should probably check out). If you've ever wanted to see a mouse kill a bear, well, then Sean Rubin's your guy:

Wot, wot!

Wowwwwww  :o I wish I could draw like that  :D!
"Get him! Grab that spy! I want his head!"
Basil chuckled. "What's the matter? Isn't your own head good enough? No, I don't suppose it is. Ugly-looking brute, aren't you?" -Basil to Cluny the Scourge (Redwall)

"The second you change "I can't" into "why not", you can do anything in the world."

Luftwaffles

The art in the first spoiler is amazing! I love it :D

Chris Baker is my favourite illustrator, though he's been mentioned plenty of times already, and for good reason.  The illustrations in Legend of Luke stood out to me when I first read the book, and his drawings capture how I've always imagined the creatures of Redwall look.

Soran, that must be a different book. I'm reading Shadows Within, it looks nothing like Sean Rubin's illustrations.

David Elliot's gotta be one of my all-time favorites, right up there next to Sean Rubin.
It's pronounced "Matchavalleeyun".
Nah, just kiddin'.
It's "Macki-velian".
